Gluten Free Kahlua & Coffee Brownies

  • 5 oz. dark chocolate (60-70%)
  • 1⁄4 cup coconut oil
  • 3⁄4 cup all purpose gluten free flour (I used Bob’s Red Mill)
  • 3⁄4 cup light brown sugar
  • 1⁄2 cup powdered sugar
  • 1⁄4 tsp. baking soda
  • 1⁄2 tsp. salt
  • 4 Tblsp. Kahlua
  • 2 eggs
  • 1 Tblsp. coffee extract
  • 1⁄2 cup dark chocolate chips
  • Caramel sauce for drizzling
  • whipped cream for topping

In a small sauce pan, melt chocolate and coconut oil; set aside. In a mixing bowl, combine gluten free flour, sugars, baking soda and salt. Mix in Kahlua, eggs, coffee extract and the melted chocolate mixture. Spread in an 8×8 pan lined with parchment paper. Top with chocolate chips. Bake at 350 degrees F. for 40 minutes or until set. Serve warm with a drizzle of caramel sauce and whipped cream.
